No-Fuss Gravy

I usually do gravy last, using the fat and pan drippings from my roasted turkey. Gravy is super easy, BUT when it comes to gluten-free gravy, you’ll want to be careful. Many gluten-free thickeners will actually make gravy very gooey and slimy; your best bet is using organic corn starch (if you can tolerate corn). Organic corn starch is made  from non-GMO corn and is perfectly fine on special occasions – I order mine from Tropical Traditions but you can find organic corn starch at most natural markets and Whole Foods. Yes, I know this is a grain-free recipe site; but I just can’t ask my fellow bad cooks to babysit gravy to keep it from going gooey. There are more important things to do, like finish that bottle of wine before Grandpa Phil gets to it. Note: whenever I screw up my gravy, I simply blend ½ cup mashed potatoes with 1 cup pan drippings and season with salt and pepper. Maybe THAT’S the recipe I should’ve used here. Despite the NUMBER of steps involved in making a great turkey, they’re all so simple, a Bad Cook could do ‘em. Breathe. One step at a time. These instructions are best for pasture-raised turkeys, which you can get from local farmers (check EatWild.com). You can also order through online retailers like Slanker’s Meats or check your local health food market. If you use a standard Butterball turkey, you’ll want to use the recipe listed on the package. You will NOT need to brine a Butterball, as it’s already injected with a solution to keep it moist. Your life will be ten thousand times easier if you request that your butcher SPLIT the pastured turkey for you. If this isn’t possible, that’s OK. Just so you know. Your turkey will be ten thousand times more delicious, moist and flavorful if you brine it. Brine just means “put it in salt water for awhile.” It’s super duper easy – instructions below.
