Ingredients
  • 1 Tablespoon gelatin Knox or Great Lakes in the Orange can; you’ll dissolve this in ¼ cup ice-cold water, but don’t do it yet
  • 1 can pumpkin purée 14-16 oz
  • 3/4 cup heavy cream or coconut milk, or cashew cream
  • 1/2 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 3 egg yolks
  • 1/2 Tablespoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 Recipe Easy Grain-free No-bake Pie Crust

Instructions
  1. Combine pumpkin purée, cream, maple syrup, vanilla, egg yolks, pumpkin pie spice and cinnamon in the blender and purée until smooth.
  2. Pour the pumpkin mixture into a saucepan and heat over medium heat.
  3. Once pumpkin mixture is heated and barely bubbling, whisk 1 Tbs. gelatin into ice-cold water.
  4. Quickly add gelatin-water mixture to the pumpkin mixture and stir well. Continue to heat (barely bubbling) for about 1 minute.
  5. Remove mixture from heat and allow to cool. Once cooled, blend once more to ensure it’s super-smooth.
  6. Pour into prepared Easy Grain-free No-bake Pie Crust and refrigerate until completely solid and cut-table. Serve cold.
