  • 4 medium sweet potatoes
  • 2 teaspoons coconut oil
  • 1 teaspoon sea salt

Instructions
  1. Preheat oven to 350 degrees.
  2. Wash and dry sweet potatoes. Pierce each one several times with a knife.
  3. Rub a small amount of coconut oil over each potato. Place them all on a baking sheet. Sprinkle lightly with sea salt.
  4. Bake for about one hour or until they are completely soft in the center when pierced.
  5. Cool completely before storing. They will keep covered in the refrigerator for up to one week.
