Blueberry jam! Sure, you can put it on pancakes and life will be awesome but, if you love sweet & savory combos, try this jam with grilled chicken or pork tenderloin. You can omit the balsamic vinegar; it just lends a touch of tartness to the berries if they’re on the bland side.

Ingredients
  • 1 + 1/2 cups blueberries fresh or frozen
  • 3 Tablespoons honey
  • 1 teaspoon balsamic vinegar optional
  • 1 teaspoon vanilla extract

Instructions
  1. Stir together blueberries, honey, and balsamic vinegar in a small saucepan.
  2. Heat over medium-high heat. Stir and mash the berries with the side of your spoon. Cook until the jam begins to bubble, then reduce heat to medium and keep at a light simmer.
  3. Continue cooking for about 20 minutes, uncovered, stirring often to prevent the bottom from scorching. The jam will reduce and thicken.
  4. Remove from heat and stir in the vanilla extract.
  5. Cool the jam before covering and refrigerating. Use within 1-2 weeks.
