Ingredients
  • 12 pitted dates sliced in half
  • hot water to cover dates see instructions
  • 3/4 cup roughly ground pecans approximately 1 cup whole pecans will grind into ¾ cup
  • 1/2 teaspoon salt
  • 3/4 cup coconut butter softened (soften by putting the container in a pot of warm water or microwaving briefly)
  • 1/2 teaspoon vanilla extract
  • 1/2 tablespoon cinnamon
  • 1.5 cups almond flour

Instructions
  1. Cover your pitted dates with hot water and set aside. (This allows the dates to soften, which will help them make the crust firm.) Leave them for about 3 minutes.
  2. Once the dates have softened, remove them from the liquid BUT SAVE THE LIQUID.
  3. Combine softened dates, ground pecans, salt, coconut butter, vanilla, and cinnamon in a mixer or blender. Pulse until completely combined, being careful not to cross into purée territory.
  4. Pour the mixture into a separate bowl and add almond flour. Use your hands to combine everything, making it nice and crumbly.
  5. Before you press the mixture into your pie pan, ensure that it’s not TOO crumbly. If needed, add a bit of the date water (a spoonful or two) to enable the mixture to press into the pan easily. (If you’re using this as Painless Apple Crisp topping, just sprinkle it over the top of your apple mixture.)
  6. Press the mixture into the pie pan and up the edges. Place the pie pan in the refrigerator and allow it to solidify (a few hours, minimum) before adding your cooled filling. Serve right out of the fridge.

  1. Hi, will coconut oil work just as well as the coconut butter?
