Ingredients
  • 1 head fresh cauliflower chopped into florets (leave out the stem), or 1-2 bags of frozen cauliflower
  • roasted garlic optional
  • 1/4 cup heavy cream replace with 2 Tbs. broth and 2 Tbs. cashew cream if making dairy-free
  • 1/2 stick butter omit if making dairy-free
  • Crumbled bacon optional

Cook Time -20-30minutes

Cook Time -20-30minutes
Instructions
  1. Steam cauliflower florets until completely soft/cooked; or prepare and drain frozen cauliflower according to package instructions.
  2. Put cauliflower in a blender or food processor and purée until creamy.
  3. OPTIONAL STEP: to reduce water content in the cauliflower, squeeze excess water from puréed cauliflower using a nut milk bag or cheesecloth.
  4. Combine puréed cauliflower, cream (or dairy-free alternatives), butter and roasted garlic (optional) in the blender or food processor.
  5. Purée again to combine. Taste and add salt as desired.
  6. Top with bacon crumbles. I highly encourage this practice.
