Ingredients
  • 4 large hard boiled eggs chopped
  • 2 Tablespoons green pepper chopped
  • 2 Tablespoons carrots chopped
  • 2 Tablespoons celery chopped
  • 2 Tablespoons fresh parsley chopped fine, optional
  • 2 Tablespoons sweet onion chopped fine
  • 3 Tablespoons mayonnaise
  • 1/4 teaspoon mustard powder
  • 1/2 teaspoon dried dill
  • sea salt
  • ground black pepper

Instructions
  1. Chop cold, hard-boiled eggs into small chunks. Add pepper, celery, carrots, onions, and parsley. Stir to combine.
  2. In a small cup, stir together mayonnaise, mustard powder, and dill until well blended. Add to egg and vegetable mixture and blend gently. Season with salt and ground black pepper.
  3. Keep refrigerated and use within one week.
