Hamburger Steak with Squash and Onions

I love a good diner-style hamburger steak. They come together fast on the stove for a quick and hearty meal. This recipe makes four, 1/4 pound servings. You could also divide the beef into 6 patties instead, just reduce your cook time.

This recipe was made with sliced leeks, but feel free to use your favorite onion: red, yellow, white, or Vidalia. Whatever floats your (hamburger) boat.

Ingredients
  • For the burgers
  • 1 pound grassfed ground beef
  • 1 Tablespoon cooking fat coconut oil, butter, or ghee
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • For the Squash and Onions
  • 2 medium yellow squash sliced, about 2 cups
  • 1 large leek or onion sliced, about 2 cups
  • 2 Tablespoons cooking fat coconut oil, butter, or ghee

  • 2 medium yellow squash sliced, about 2 cups
  • 1 large leek or onion sliced, about 2 cups

Instructions
  1. Heat cooking fat in a large skillet over medium heat.
  2. Form ground beef into four large patties, about 1/2" thick. Season generously with paprika, garlic powder, salt, and pepper.
  3. Fry the burgers for about 5-8 minutes per side or until your preferred doneness.
  4. Remove burgers to a plate and cover lightly with foil. Do not clean the skillet, add extra cooking fat, onions, and squash. Season with salt and ground black pepper. Sauté over medium-high heat for 8-10 minutes or until the vegetables are soft and lightly browned.
  5. Top each hamburger steak with a large portion of squash and onions.
