Ingredients
  • 2 cans tuna drained, about 1 + 2/3 cups
  • 1 medium zucchini chopped
  • 3 medium roma tomatoes chopped
  • 1/4 cup green olives chopped
  • 1/4 cup red onions chopped fine
  • 2 Tablespoons capers optional
  • 2 Tablespoons lemon juice
  • 2 Tablespoons olive oil
  • 1 teaspoon dried oregano
  • sea salt
  • ground black pepper

Instructions
  1. Stir together tuna, zucchini, olives, tomatoes, onions, and capers.
  2. Drizzle with olive oil and lemon juice. Add oregano and sprinkle liberally with salt and black pepper. Mix until well combined.
  3. Keep refrigerated and use within one week.

  2. Again with the genius twists on classic favorites! I love the addition of capers, fresh zucchini and oregano in this. Would be incredible stuffed into hollowed-out tomatoes!
