Ingredients
  • 4-5 large russet potatoes washed, peeled and chopped into 1” chunks
  • 1 stick butter (if making dairy-free; replace with 1/3 cup broth plus 1/3 cup cashew cream)
  • 1/2-1 cup chicken broth or vegetable, or beef

Instructions
  1. In a large stockpot, boil enough water to completely cover your potato chunks. Add a dash of salt.
  2. Bring water to a boil and add potato chunks. Keep at a low boil (think anger, not rage) for 8 minutes, then scoop out a chunk to see if it can be easily smushed with a fork. If not, boil a few minutes longer until you’re there.
  3. Once potatoes are done, drain the water IMMEDIATELY. Return potatoes to stockpot and toss in a stick of butter.
  4. The pot and the potatoes will still be hot, so the butter will melt quickly. As it melts, mash the potatoes & butter with a potato masher.
  5. Taste the potatoes and add some salt as you see fit. For creamier mashed potatoes, add broth gradually until they reach your desired consistency.
