Spicy Cinnamon Sweet Potatoes

I don’t have a dishwasher. It’s a travesty. I will go to great lengths to keep my sink below critical mass, and I refuse to melt coconut oil or butter in a separate pot if I can avoid it.

When roasting veggies I like to spread ’em on the baking sheet, sprinkle the spices, and plop solid cooking fat right in the middle. After 5 minutes in the oven, everything is melted and lovely. Then I pull out the pan and use a spatula to stir the vegetables and evenly distribute the fat and spices. BOOM. One less dirty dish. It’s a small victory.

Ingredients
  • 4 large sweet potatoes peeled and diced into large cubes
  • 2 Tablespoon cooking fat coconut oil, butter, or ghee
  • 2 teaspoons smoked paprika
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon ground black pepper

Instructions
  1. Preheat oven to 425 degrees and line a baking sheet with parchment paper or a silpat mat.
  2. Spread sweet potato cubes evenly in a single layer on the baking sheet.
  3. Stir all spices together and sprinkle over the sweet potatoes. Place solid cooking fat in the center of the pan.
  4. Roast for 5 minutes, then remove the pan from the oven and use a spatula to toss the potatoes and distribute the fat and spices.
  5. Continue roasting for another 20-25 minutes until potatoes are soft and lightly browned.
